Crafted from 100% Blue Weber agave using ancestral artisanal methods, cooked in mesquite-wood-fired stone ovens, tahona crushed, and fermented in open-air wooden tanks. Aged for up to 4 years in ex-bourbon American oak and up to 3 years in ex-red wine French oak barrels, this extra añejo yields a exceptionally deep, multi-layered profile of roasted agave, dark fruits, and rich oak influence.
Food Pairing: Dark chocolate desserts, prime ribeye, aged Manchego cheese, roasted pork, and rich espresso.
Tasting Notes : Deep amber with brilliant copper highlights and a thick, velvety, full-bodied texture.
Nose : Roasted agave, mesquite smoke, dark dried cherries, vanilla, toasted oak, and dark cocoa.
Palate : Rich and complex with layers of dark plum, sweet cooked agave, leather, toasted nuts, caramel, and subtle red wine tannins.
Finish : Exceptionally long, warm, and smooth with lingering notes of dark chocolate, spicy oak, and smoky agave sweetness.
Serve : Serve neat at room temperature in a snifter or cognac glass.
