After 1st fermentation, this farmhouse ale is aged 6 months in barrel with 2000lbs of ripe Lepp Farms peaches and lactobacillus cultivated from fresh Christines Daily Farm yogurt. We then added house-smoked peaches for additional juicy character and complexity. Finally, Thatcher Beehives honey was introduced for secondary fermentation in the bottle. Your Niagara farmlands at work!
