Cava de Oro Plata is a clear, unaged tequila made from 100% blue Weber agave. It comes from Jalisco, Mexico, and is made under NOM 1477. The agave grows in the Los Valles area, the lower valley land around the town of Tequila. Since it never sees a barrel, what you taste is the plant and the still.
The making is fairly classic. The agave hearts are slow cooked in stone ovens, then crushed with a roller mill. The juice ferments in steel tanks. After that, it is double distilled in pot stills. The family behind it draws on three generations of tequila know-how.
In the glass it looks bright and crystal clear, with a faint silver shine. Lift it to your nose and you'll find cooked agave first. Herbal notes come next, along with a light earthy, almost mineral edge. It smells clean and gentle rather than sharp. Give it a minute in the glass and the agave grows a little sweeter.
The first sip is soft and lightly sweet. Cooked agave leads, with small hints of vanilla and caramel. Black pepper and a herbal spice then add some warmth. The body is smooth and easy, not heavy. Some drinkers find it on the sweet side, which makes it very approachable. The finish stays light and sweet, with a last touch of pepper.
This is a friendly blanco for everyday pours. Sip it neat or over a large ice cube when you want a calm, sweet agave note. It also works well in a margarita, a Paloma or a Tequila Sunrise. A squeeze of fresh lime and good ice are all you really need. Feel free to use it as the base for your own blanco tequila drinks at home.
Food ideas are easy here too. Try it with ceviche, grilled shrimp, fish tacos or spicy chicken with lime. The gentle sweetness also plays nicely against salty chips and fresh salsa. If you are new to the category, it makes a soft first step. If you already love tequila, it is a relaxed bottle for a casual night with friends.
