This blush-hued spirit radically redefines expectations for an unaged agave expression. Cascahuín, the legendary NOM 1123 distillery, painstakingly crafts Montagave Héritage Blanco using traditional masonry ovens. They ferment the deep-well water and roller-milled agave without fibers, creating an impeccably clean foundational spirit. After distilling in copper-coiled stainless pots, the tequila rests 45 days in first and second-fill Grand Cru Bordeaux casks from Château Pape Clément. The liquid transforms almost completely. You'll get a fascinating collision of old-world Mexican tradition and elegant French winemaking.
French oak fundamentally alters the typical lowland flavor profile. Those brief 45 days in wine barrels infuse the liquid with a captivating rosy tint. The wood imparts delicate layers of red fruit that mingle effortlessly with savory vegetal undertones. The resulting spirit tastes wildly vibrant. You'll notice a remarkable tension between the dense, sweet cooked agave and the surprisingly dry, tannic influence of the imported French Bordeaux casks. This release stands as a vital addition to any serious spirits collection.
Key production highlights include:
